How to prepare the original pasta all' Amatriciana / La pasta all' Amatriciana

Even today we offer you one of the most popular recipes of the Italian cuisine, that is used to be copyed and with multiple versions in the world.
L 'Amatriciana has its origins in the town of Amatrice, a town of Latium on the border with the' Abruzzo.
In the original preparation is provided 's use of the pork cheek: The pork cheek is made from pig's snout so than the bacon, has a more delicate flavor and fragrant.
You can prepare the sauce with the bacon, but it will not be a 'Amatriciana.
The cheese traditionally used for 'Amatriciana is the original pecorino Romano than that it tastes less salty and strong.
The shapes of pasta allowed, are spaghetti and bucatini, we chose the latter.
But let's see now  how to prepare the pasta all 'Amatriciana

Anche oggi vi proponiamo una tra le ricette della cucina Italiana più amate, copiate e con più versioni differenti al mondo.
L' Amatriciana ha origine nella città di Amatrice, una cittadina del Lazio ai confini con l' Abruzzo.  
Nella preparazione originale è previsto l' uso del guanciale: il guanciale è ricavato dal muso del maiale quindi, rispetto alla pancetta, ha un sapore più delicato e profumato. 
Voi potete preparare il sugo anche con la pancetta, ma non sarà un' amatriciana.
Il pecorino tradizionalmente utilizzato per l' amatriciana è il pecorino di Amatrice che rispetto a quello Romano ha un gusto meno salato e forte.
I formati di pasta ammessi, sono gli spaghetti e i bucatini, noi abbiamo scelto gli ultimi.
Ma vediamo ora come si prepara la pasta all' Amatriciana



Ingredients
for two people
200 grams of spaghetti or bucatini
100 grams of pork cheek
300 grams of peeled tomatoes, mashed with a fork
1 tablespoon lard
100 grams of pecorino di Amatrice
pepper, salt


Ingredienti
per due persone 
200 gr di bucatini o spaghetti
100 gr di guanciale
300 grammi di pomodori pelati schiacciati con la forchetta 
1 cucchiaio di strutto
100 grammi di pecorino di Amatrice
peperoncino, sale 



Procedure
Cut the pork cheek into strips, please, do not cut into cubes because it tends to dry out and harden.
Put a pan on the fire, pour in a tablespoon of lard, and add the pork cheek.
Sauté for a few minutes and add the red pepper.
The pork cheek must assume a golden yellow color.
Remove the pan from the heat, pour in the crushed tomatoes, return to the heat and simmer for 10 minutes your sauce should be nice and thick bodied.
Now remove the chilli.
During cooking the sauce, boil the pasta or spaghetti in salted water and then drain it al dente, pour into the pan with the sauce, sauté a couple of minutes, add the grated cheese and toss.
Serve immediately sprinkled with pecorino.

Procedimento
Tagliate il guanciale a striscioline, mi raccomando, non tagliatelo in cubetti perché tenderebbe a seccarsi e indurirsi. 
Ponete una padella sul fuoco, versateci dentro un cucchiaio di strutto, e aggiungete il guanciale.
Fate rosolare per un paio di minuti e aggiungete il peperoncino. 
Il guanciale deve assumere un colore giallo dorato.
Togliete la padella dal fuoco, versateci dentro i pomodori schiacciati, rimettetela sul fuoco e lasciate cuocere per 10 minuti: il vostro sugo deve risultare bello denso e corposo. 
Ora togliete il peperoncino.
Durante la cottura del sugo, lessate i bucatini o spaghetti in acqua salata e scolateli al dente quindi, versateli nella padella con il sugo, fateli saltare un paio di minuti, e conditeli aggiungendo il pecorino grattugiato.
Serviteli subito cosparsi di pecorino.
