The original Italian spaghetti alla Carbonara / Gli spaghetti alla Carbonara

One of the Italian dishes with multiple versions in the world is undoubtedly the Carbonara.
There are those who does it with the bacon, who would add the onion, people even the cream.
Today we are here to dispel the myths that revolve around this dish, as simple as tasty and loved.
La Carbonara is a dish that originates in Latium, just in Rome, which is prepared with the pork cheek like bacon comes from pork, but it is a different piece of meat.
Of course, it is not always easy to find a nice piece of pork cheek but if you want to prepare a true Carbonara, this is undoubtedly a key ingredient.
The cheese that is used for the Carbonara is the Pecorino Romano, and the format of typical pasta are undoubtedly spaghetti.
But let's see now, how to prepare the spaghetti alla Carbonara

Uno dei piatti con più versioni differenti al mondo è senza dubbio la Carbonara. 
C'è chi la fa con la pancetta, chi ci aggiunge la cipolla, chi addirittura la panna da cucina.
Noi oggi siamo qui per sfatare i miti che ruotano intorno a questo piatto, tanto semplice quanto gustoso e  amato.
La Carbonara è un piatto che ha origine nel Lazio, esattamente a Roma, si prepara con il guanciale che come la pancetta viene dal maiale, ma è un pezzo di carne differente. 
Certo, non è sempre facile trovare un bel pezzo di guanciale ma se volete preparare una vera Carbonara, questo è senza dubbio un ingrediente fondamentale. 
Il formaggio che si utilizza per la Carbonara è il Pecorino Romano, e il formato di pasta tipico sono senza dubbio gli spaghetti.
Ma vediamo ora come si preparano gli spaghetti alla Carbonara



Ingredients
for 2 people
200 grams of spaghetti
2 eggs
2 tablespoons Pecorino Romano
100 grams of pork cheek
2 tablespoons olive oil
salt
pepper

Ingredienti
per 2 persone
200 gr di spaghetti
2 uova
2 cucchiai di Pecorino Romano
100 gr di guanciale
2 cucchiai di olio d'oliva
sale
pepe




Procedure
Pour the eggs into a bowl, add in the Pecorino Romano cheese, salt and pepper and beat with the 'help of a fork making a homogeneous mixture.
Cut the pork cheek into strips and fry lightly in a pan with the olive' oil.
Now cook the spaghetti, drain it al dente and kept a ladle of water from the pasta.
Now take the spaghetti and pour into the pork cheek with the oil, then pour over the egg mixture.
Mix and place the pan with the dough on the fire, take the eggs thicken slightly and pour a bit of water from the pasta to make sure that the spaghetti will not dry out too much.
Serve immediately your spaghetti alla carbonara, and enjoy your meal by Frederick II Genuine Italian Experience!

Procedimento
Versate le uova in una ciotola, aggiungeteci il Pecorino Romano, regolate di sale e pepe e sbattete con l' aiuto di una forchetta realizzando un composto omogeneo.
Tagliate il guanciale a striscioline e soffriggetelo leggermente in una padella con l' olio d' oliva.
Ora cuocete gli spaghetti, scolateli al dente e conservate un mestolo d' acqua di cottura della pasta.
Prendete ora gli spaghetti e versateli nel guanciale con l' olio, infine versateci sopra il composto di uova.
Mescolate e mettete la padella con la pasta sul fuoco,  fate rapprendere leggermente le uova e versate un po' di acqua di cottura della pasta per fare in modo che gli spaghetti non si asciughino troppo.
Servite subito i vostri spaghetti alla Carbonara, e buon appetito da Federico II Genuine Italian Experience!
